Ingredients

  • 1 cup brewed coffee
  • 4 oz semi-sweet chocolate
  • 1 cup heavy whipping cream
  • 4 egg yolks
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1 1/2 cups crushed graham crackers

Instructions

  1. Preheat your oven to 350°F (175°C). Mix crushed graham crackers with melted butter and 1 tablespoon of sugar until crumbly. Press the mixture into a pie pan and bake for 10 minutes. Allow it to cool.
  2. In a saucepan, combine brewed coffee, sugar, and egg yolks over medium heat, whisking continuously until it thickens. Remove from heat and stir in semi-sweet chocolate until melted and smooth.
  3. Add a dollop of heavy cream to the filling to cool it down before pouring into the crust.
  4. Let the pie cool to room temperature, then refrigerate for at least 4 hours.
  5. Whip the remaining heavy cream with a touch of sugar until stiff peaks form. Spread over the chilled pie and garnish as desired.
