Ingredients

- 4 cups fresh cherries, pitted
- 1 cup granulated sugar
- 2 tablespoons cornstarch

- 1 pie crust (store-bought or homemade)
Instructions
- Prepare the Cherries: Wash and pit the cherries.
- Make the Filling: In a bowl, combine cherries, sugar, cornstarch, lemon juice, and vanilla extract.
- Prepare the Crust: If making from scratch, mix flour and salt, cut in butter until crumbly, then add ice water and roll out.
- Assemble the Pies: Line a greased muffin tin with crust and fill with cherry mixture.
- Bake: Preheat oven to 375°F (190°C) and bake for 20-25 minutes until crust is golden.
- Cool: Let pies cool slightly to set the filling.
