Ingredients

  • 1 lb chicken thighs or breasts, skinless and boneless
  • 1 can (15 oz) white beans, rinsed and drained
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 1 stalk celery, chopped
  • 4 cups chicken or vegetable broth
  • 1 can (15 oz) diced tomatoes
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1 tsp turmeric
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Prepare the ingredients: chop onion, garlic, carrots, and bell pepper into bite-sized pieces.
  2. In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, sautéing until translucent (about 3-4 minutes).
  3. Increase heat to medium-high, add chicken pieces, and brown on all sides (about 4-5 minutes per side).
  4. Add carrots and bell peppers to the pot, followed by spices (cumin, coriander, paprika, turmeric), and stir until chicken is coated.
  5. Pour in broth and diced tomatoes, stir well, bring to a gentle boil, then reduce heat and let simmer for about 30 minutes.
  6. During the last 10 minutes, fold in the white beans gently to warm.
  7. Before serving, stir in fresh parsley and cilantro.
  8. Taste and adjust seasoning; serve warm with crusty bread, rice, or couscous.

Notes

For a quicker preparation, you may substitute white beans with chickpeas or chicken with lamb.
