- 1 lb chicken thighs or breasts, skinless and boneless
- 1 can (15 oz) white beans, rinsed and drained
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 carrots, sliced
- 1 bell pepper, chopped
- 1 stalk celery, chopped
- 4 cups chicken or vegetable broth
- 1 can (15 oz) diced tomatoes
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1 tsp turmeric
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
- Fresh cilantro, chopped, for garnish
Instructions
- Prepare the ingredients: chop onion, garlic, carrots, and bell pepper into bite-sized pieces.
- In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, sautéing until translucent (about 3-4 minutes).
- Increase heat to medium-high, add chicken pieces, and brown on all sides (about 4-5 minutes per side).
- Add carrots and bell peppers to the pot, followed by spices (cumin, coriander, paprika, turmeric), and stir until chicken is coated.
- Pour in broth and diced tomatoes, stir well, bring to a gentle boil, then reduce heat and let simmer for about 30 minutes.
- During the last 10 minutes, fold in the white beans gently to warm.
- Before serving, stir in fresh parsley and cilantro.
- Taste and adjust seasoning; serve warm with crusty bread, rice, or couscous.
Notes
For a quicker preparation, you may substitute white beans with chickpeas or chicken with lamb.
