  • 68 Granny Smith and Honeycrisp apples, peeled, cored, and sliced
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon lemon juice
  • 1/4 cup unsalted butter, cubed
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 46 tablespoons ice water

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, toss apple slices with sugars, cinnamon, nutmeg, and lemon juice.
  3. In a mixing bowl, combine flour and salt. Cut in cold butter until the mixture resembles coarse crumbs.
  4. Gradually add ice water until the dough holds together.
  5. Chill the dough for at least an hour.
  6. Roll out the dough and fit one portion into a pie dish. Fill with apple mixture and cover with the second dough, cutting slits for steam to escape.
  7. Bake for 15 minutes, then lower the temperature to 350°F (175°C) and bake for an additional 40-50 minutes until apples are tender and crust is golden.
  8. Let the pie cool for at least an hour before slicing.
