- 6–8 Granny Smith and Honeycrisp apples, peeled, cored, and sliced
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon lemon juice
- 1/4 cup unsalted butter, cubed
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 4–6 tablespoons ice water
Instructions
- Preheat oven to 425°F (220°C).
- In a large bowl, toss apple slices with sugars, cinnamon, nutmeg, and lemon juice.
- In a mixing bowl, combine flour and salt. Cut in cold butter until the mixture resembles coarse crumbs.
- Gradually add ice water until the dough holds together.
- Chill the dough for at least an hour.
- Roll out the dough and fit one portion into a pie dish. Fill with apple mixture and cover with the second dough, cutting slits for steam to escape.
- Bake for 15 minutes, then lower the temperature to 350°F (175°C) and bake for an additional 40-50 minutes until apples are tender and crust is golden.
- Let the pie cool for at least an hour before slicing.
Notes
