- 1 lb ground beef
- 3 cups day-old rice
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup frozen peas
- 1 cup carrots, diced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 eggs, lightly beaten
- 2 green onions, chopped
Instructions
- Prep your ingredients by chopping vegetables and gathering everything.
- Heat a large skillet or wok over medium-high heat and add a splash of oil.
- Add the ground beef and cook until browned, breaking it apart as it cooks.
- Push the beef to one side and add onions and garlic, sautéing for 2 minutes.
- Add your chosen vegetables and sauté until they are tender.
- Add the cold, day-old rice and break apart any clumps, stirring well.
- Drizzle soy sauce and sesame oil over the rice and mix well.
- Push the rice to one side and scramble the eggs in the empty space, then mix everything together.
- Fold in chopped green onions or fresh herbs, remove from heat, and serve.
Notes
For variations, substitute ground beef with turkey or tofu, and use whichever vegetables you have on hand.
