Description

A rich and creamy gravy made without any meat drippings, perfect for elevating any meal.


Ingredients

  • 2 tablespoons butter or olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, chopped (baby Bella or cremini)
  • 2 tablespoons all-purpose flour
  • 2 cups vegetable broth
  • 1 tablespoon soy sauce or tamari
  • Fresh thyme or rosemary
  • Salt and pepper, to taste

Instructions

  1. In a medium skillet, melt the butter or heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 3 minutes. Then, add minced garlic for another minute.
  2. Add the chopped mushrooms and cook for about 5-7 minutes until golden brown and fragrant.
  3. Sprinkle the flour over the sautéed mixture, stirring continuously to combine. Cook for another 2 minutes.
  4. Gradually whisk in the vegetable broth, stirring constantly to avoid lumps.
  5. Add soy sauce, salt, and freshly ground pepper. Bring to a simmer and cook for about 5 minutes until thickened.
  6. Stir in the chopped fresh herbs right before serving.

Notes

You can substitute mushrooms with finely chopped lentils for a different taste and use cornstarch for a gluten-free option.
