Ingredients

- 2 tablespoons butter or olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, chopped (baby Bella or cremini)
- 2 tablespoons all-purpose flour
- 2 cups vegetable broth
- 1 tablespoon soy sauce or tamari
- Fresh thyme or rosemary
- Salt and pepper, to taste
Instructions
- In a medium skillet, melt the butter or heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 3 minutes. Then, add minced garlic for another minute.
- Add the chopped mushrooms and cook for about 5-7 minutes until golden brown and fragrant.
- Sprinkle the flour over the sautéed mixture, stirring continuously to combine. Cook for another 2 minutes.
- Gradually whisk in the vegetable broth, stirring constantly to avoid lumps.
- Add soy sauce, salt, and freshly ground pepper. Bring to a simmer and cook for about 5 minutes until thickened.
- Stir in the chopped fresh herbs right before serving.
Notes
You can substitute mushrooms with finely chopped lentils for a different taste and use cornstarch for a gluten-free option.
