  • 1 cup sliced fresh mushrooms (cremini or shiitake)
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons butter or olive oil
  • Salt and pepper to taste

Instructions

  1. Prep Your Ingredients: Wash and dice potatoes into small cubes. Dice onions, mince garlic, and slice mushrooms.
  2. Boil the Potatoes: Bring salted water to a boil. Add diced potatoes and cook until tender, about 5–7 minutes. Drain and set aside.
  3. Sauté Aromatics: In a skillet, melt butter over medium heat. Add onions and garlic, cooking until golden and fragrant, about 4–5 minutes.
  4. Cook the Mushrooms: Add mushrooms to the skillet and cook until soft and golden.
  5. Combine Everything: Stir in the cooked potatoes, season with salt, pepper, and herbs. Cook until crispy, about 8–10 minutes.
  6. Add Cheese: Once crispy, sprinkle cheese on top and cover until melted, about 2–3 minutes.
  7. Serve and Garnish: Remove from heat, garnish with fresh herbs, and serve hot.
