  • 8 ounces cremini or shiitake mushrooms, sliced
  • 4 cups leafy greens (kale or Swiss chard), chopped

  • 1 can (14 ounces) crushed or diced tomatoes
  • Salt and pepper to taste
  • Fresh basil and thyme, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped garlic and onions, stirring until fragrant and golden brown.
  3. Toss in the sliced mushrooms and sauté until soft and caramelized.
  4. Add the leafy greens and allow them to wilt slightly.
  5. Pour in the canned tomatoes and vegetable broth, bringing the mixture to a gentle boil.
  6. Once boiling, reduce heat and let it simmer for about 20 minutes.
  7. Add salt, pepper, and fresh herbs just a few minutes before serving.
