Description

A comforting and hearty Crockpot Meatloaf that’s perfect for family gatherings, infused with savory flavors and a tangy glaze.


Ingredients

  • 1 lb ground beef (or turkey)
  • 1 cup breadcrumbs
  • 1 egg
  • 1/2 cup chopped onions
  • 2 cloves minced garlic
  • 1 cup sautéed mushrooms (optional)
  • 2 tbsp chopped fresh parsley (or thyme)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup ketchup (or barbecue sauce)

Instructions

  1. Finely chop onions and mince garlic. Sauté mushrooms in olive oil until tender if using.
  2. In a large mixing bowl, combine ground meat, breadcrumbs, egg, onions, garlic, and sautéed mushrooms. Add herbs and seasonings, mixing gently.
  3. Shape mixture into a loaf and place into the Crockpot.
  4. Spread chosen glaze on top of the meatloaf.
  5. Cook on low for 6-8 hours or high for 3-4 hours, until internal temperature reaches 160°F.
  6. Let the meatloaf rest for 10 minutes, then slice and serve.

Notes

Substitutions include ground turkey, oats instead of breadcrumbs, and adding chopped vegetables for extra nutrition.
