Ingredients

- 1 lb ground beef (or turkey)
- 1 cup breadcrumbs
- 1 egg
- 1/2 cup chopped onions
- 2 cloves minced garlic
- 1 cup sautéed mushrooms (optional)
- 2 tbsp chopped fresh parsley (or thyme)
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 cup ketchup (or barbecue sauce)
Instructions
- Finely chop onions and mince garlic. Sauté mushrooms in olive oil until tender if using.
- In a large mixing bowl, combine ground meat, breadcrumbs, egg, onions, garlic, and sautéed mushrooms. Add herbs and seasonings, mixing gently.
- Shape mixture into a loaf and place into the Crockpot.
- Spread chosen glaze on top of the meatloaf.
- Cook on low for 6-8 hours or high for 3-4 hours, until internal temperature reaches 160°F.
- Let the meatloaf rest for 10 minutes, then slice and serve.
Notes
Substitutions include ground turkey, oats instead of breadcrumbs, and adding chopped vegetables for extra nutrition.
