Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried rosemary or thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels.
  3. In a bowl, mix together olive oil, minced garlic, paprika, herbs, salt, and pepper.
  4. Rub the mixture all over the chicken thighs.
  5. Place the chicken thighs skin-side up on a baking sheet lined with parchment paper.
  6. Bake for 35-45 minutes or until the internal temperature reaches 165°F (74°C).
  7. If desired, broil for the last 2-3 minutes for extra crispiness.
  8. Allow the chicken to rest for 5-10 minutes before serving.
