Ingredients

- Pasta (spaghetti, fettuccine, or whole grain)
- 2 leeks (sliced)
- 8 oz cremini or shiitake mushrooms (chopped)
- 2 cloves garlic (minced)
- 2 tbsp butter
- 2 tbsp olive oil
- 1/3 cup grated parmesan cheese
Instructions
- Prep your ingredients: Clean and slice leeks; chop mushrooms and mince garlic.
- Cook the pasta: Bring a pot of salted water to boil, add pasta and cook until al dente, reserving 1 cup of pasta water.
- Sauté the leeks and mushrooms: In a skillet, melt butter with olive oil, add leeks and cook until soft, about 5 minutes. Add mushrooms and garlic; cook until tender, around 8 minutes.
- Combine ingredients: Add drained pasta and a splash of reserved pasta water to the skillet and mix well.
- Finish with cheese: Stir in remaining butter and parmesan cheese until melted and coated.
- Serve: Plate the pasta and drizzle with olive oil, cracked pepper, and herbs if desired.
Notes
Caramelization enhances the flavors, so cook leeks and mushrooms slowly. Use a pasta shape that captures sauce well.
