- 4 Yukon Gold or Russet potatoes, peeled and diced
- 1 sweet onion, chopped
- 3 cloves fresh garlic, minced
- 2 stalks celery, chopped
- 2 carrots, chopped
- 1 cup sautéed mushrooms (cremini or button)
- 4 cups low-sodium chicken or vegetable broth
- 1 cup cream or half-and-half (or plant-based alternative)
- 2 tablespoons Cajun seasoning (adjust to taste)
- Fresh parsley or chives, for garnish
Instructions
- Prep your ingredients by peeling and dicing potatoes, and chopping the onion, celery, carrots, and garlic.
- In a large pot, heat oil over medium heat. Add onion, celery, and carrots; sauté until soft, about 5-7 minutes. Add garlic for the last minute.
- Add diced potatoes and sautéed mushrooms to the pot. Pour in enough broth to cover the veggies and stir in Cajun seasoning.
- Bring to a gentle boil, then reduce heat and let it simmer for 20-30 minutes until potatoes are tender.
- Use an immersion blender to achieve your desired consistency, mixing creamy and chunky textures.
- Stir in cream or milk, adjust seasoning, and let it heat through.
- Ladle into bowls, top with fresh herbs, and enjoy!
Notes
For a lighter version, substitute potatoes with cauliflower and use a flavorful stock instead of traditional broth. Don’t skip the blending step for a luxurious mouthfeel.
