Description

A creamy and flavorful Cajun Potato Soup that combines earthy potatoes, aromatic spices, and sautéed mushrooms.


Ingredients

  • 4 Yukon Gold or Russet potatoes, peeled and diced
  • 1 sweet onion, chopped
  • 3 cloves fresh garlic, minced
  • 2 stalks celery, chopped
  • 2 carrots, chopped
  • 1 cup sautéed mushrooms (cremini or button)
  • 4 cups low-sodium chicken or vegetable broth
  • 1 cup cream or half-and-half (or plant-based alternative)
  • 2 tablespoons Cajun seasoning (adjust to taste)
  • Fresh parsley or chives, for garnish

Instructions

  1. Prep your ingredients by peeling and dicing potatoes, and chopping the onion, celery, carrots, and garlic.
  2. In a large pot, heat oil over medium heat. Add onion, celery, and carrots; sauté until soft, about 5-7 minutes. Add garlic for the last minute.
  3. Add diced potatoes and sautéed mushrooms to the pot. Pour in enough broth to cover the veggies and stir in Cajun seasoning.
  4. Bring to a gentle boil, then reduce heat and let it simmer for 20-30 minutes until potatoes are tender.
  5. Use an immersion blender to achieve your desired consistency, mixing creamy and chunky textures.
  6. Stir in cream or milk, adjust seasoning, and let it heat through.
  7. Ladle into bowls, top with fresh herbs, and enjoy!

Notes

For a lighter version, substitute potatoes with cauliflower and use a flavorful stock instead of traditional broth. Don’t skip the blending step for a luxurious mouthfeel.
