Burrata Pasta Shells

Description

Delicious pasta shells stuffed with creamy burrata and sautéed mushrooms, perfect for family gatherings.


Ingredients

  • Large conchiglie pasta shells
  • Burrata cheese
  • Fresh mushrooms (cremini or shiitake)
  • Fresh minced garlic
  • Olive oil
  • Fresh basil and parsley
  • Parmesan cheese
  • Salt
  • Pepper

Instructions

  1. Boil a large pot of salted water and cook the pasta shells until al dente. Reserve about a cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat, add garlic and sauté until fragrant, about one minute. Stir in mushrooms and cook until tender.
  3. In a large bowl, combine sautéed mushrooms, burrata, and chopped herbs. Mix gently.
  4. Fill each pasta shell with the burrata mixture and place in a greased baking dish.
  5. In the same skillet, add reserved pasta water and a drizzle of olive oil to create the sauce. Pour over the stuffed shells.
  6. Bake in a preheated oven at 375°F for about 20 minutes until golden and bubbly.

Notes

Avoid overstuffing the shells and always reserve pasta water for the sauce.
