Delicious pasta shells stuffed with creamy burrata and sautéed mushrooms, perfect for family gatherings.
Ingredients
- Large conchiglie pasta shells
- Burrata cheese
- Fresh mushrooms (cremini or shiitake)
- Fresh minced garlic
- Olive oil
- Fresh basil and parsley
- Parmesan cheese
- Salt
- Pepper
Instructions
- Boil a large pot of salted water and cook the pasta shells until al dente. Reserve about a cup of pasta water before draining.
- In a skillet, heat olive oil over medium heat, add garlic and sauté until fragrant, about one minute. Stir in mushrooms and cook until tender.
- In a large bowl, combine sautéed mushrooms, burrata, and chopped herbs. Mix gently.
- Fill each pasta shell with the burrata mixture and place in a greased baking dish.
- In the same skillet, add reserved pasta water and a drizzle of olive oil to create the sauce. Pour over the stuffed shells.
- Bake in a preheated oven at 375°F for about 20 minutes until golden and bubbly.
Notes
Avoid overstuffing the shells and always reserve pasta water for the sauce.
