- 2 cups all-purpose flour (or whole wheat, or gluten-free almond flour)
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup Greek yogurt or cottage cheese (or coconut yogurt for dairy-free)
- 1 cup mushrooms (cremini or shiitake), diced
- 2 cloves garlic, minced
- Fresh herbs (thyme, rosemary, or chives), to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, melt a tablespoon of butter and sauté diced mushrooms and minced garlic until golden brown. Set aside to cool.
- In a large mixing bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, mix melted butter, Greek yogurt (or cottage cheese), and sautéed mushroom mixture.
- Pour the wet mixture into the dry ingredients, gently stir until just combined.
- On a floured surface, knead the dough gently before rolling it out. Cut out circles of dough with a biscuit cutter.
- Place the biscuits on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until golden brown on top.
- Let cool for a few minutes before serving warm.
Notes
For a dairy-free version, substitute butter with coconut oil and yogurt with a plant-based option. Feel free to experiment with different vegetables or flavors!
