- 1 lb Ground Beef or Turkey (substitute with black beans or lentils for vegetarian)
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1–2 Bell Peppers, chopped
- 1 can Canned Tomatoes (diced or crushed)
- 1 can Black Beans, drained and rinsed
- 1 cup Corn (fresh, frozen, or canned)
- 1 packet Taco Seasoning
- 4 cups Chicken or Vegetable Broth
- 1 Fresh Lime, juiced
Instructions
- In a large pot, heat a splash of olive oil over medium heat. Add chopped onions and bell peppers, cooking until they soften, about 5 minutes. Stir in minced garlic during the last minute to prevent burning.
- Add ground beef or turkey to the pot, breaking it apart with a wooden spoon until it browns completely. Season with salt, pepper, and taco seasoning.
- Stir in the canned tomatoes, black beans, corn, and broth. Bring to a gentle boil, then reduce the heat and let it simmer for 20-30 minutes.
- Taste your taco soup and adjust seasoning as needed. Add more taco seasoning or fresh lime juice for brightness.
- Ladle the soup into bowls and top with garnishes like shredded cheese, avocado slices, chopped cilantro, or a dollop of sour cream.
Notes
Allow aromatics to soften before adding ingredients for maximum flavor. Adjust liquid as needed for desired consistency.
