Ingredients

  • 1 lb Ground Beef or Turkey (substitute with black beans or lentils for vegetarian)
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 12 Bell Peppers, chopped
  • 1 can Canned Tomatoes (diced or crushed)
  • 1 can Black Beans, drained and rinsed
  • 1 cup Corn (fresh, frozen, or canned)
  • 1 packet Taco Seasoning
  • 4 cups Chicken or Vegetable Broth
  • 1 Fresh Lime, juiced

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Add chopped onions and bell peppers, cooking until they soften, about 5 minutes. Stir in minced garlic during the last minute to prevent burning.
  2. Add ground beef or turkey to the pot, breaking it apart with a wooden spoon until it browns completely. Season with salt, pepper, and taco seasoning.
  3. Stir in the canned tomatoes, black beans, corn, and broth. Bring to a gentle boil, then reduce the heat and let it simmer for 20-30 minutes.
  4. Taste your taco soup and adjust seasoning as needed. Add more taco seasoning or fresh lime juice for brightness.
  5. Ladle the soup into bowls and top with garnishes like shredded cheese, avocado slices, chopped cilantro, or a dollop of sour cream.
