- 1 cup wild rice
- 3 cups vegetable broth
- 1 cup hazelnuts, toasted
- 1 cup dried apricots, chopped
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 tablespoons olive oil or butter
- Fresh parsley or thyme, for garnish
- Salt and pepper, to taste
Instructions
- Rinse the wild rice under cold water. In a large pot, combine the rice and vegetable broth (1:3 ratio). Bring to a boil, then reduce to a simmer and cover, cooking for 45-50 minutes until tender.
- While the rice cooks, toast the hazelnuts in a dry skillet over medium heat for about 5-7 minutes until fragrant.
- In another pan, heat olive oil or butter over medium heat. Add chopped onion and garlic, sauté until translucent, about 3-4 minutes.
- Once the rice is cooked, fluff it with a fork and add sautéed aromatics, toasted hazelnuts, and dried apricots. Stir gently to combine.
- Add fresh herbs and toss everything together. Adjust seasoning with salt and pepper to taste.
- Serve warm or at room temperature, and enjoy!
Notes
For a nut-free version, substitute hazelnuts with sunflower seeds. This dish pairs beautifully with grilled chicken or roasted vegetables.
