Ingredients

  • 1 cup wild rice
  • 3 cups vegetable broth
  • 1 cup hazelnuts, toasted
  • 1 cup dried apricots, chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil or butter
  • Fresh parsley or thyme, for garnish
  • Salt and pepper, to taste

Instructions

  1. Rinse the wild rice under cold water. In a large pot, combine the rice and vegetable broth (1:3 ratio). Bring to a boil, then reduce to a simmer and cover, cooking for 45-50 minutes until tender.
  2. While the rice cooks, toast the hazelnuts in a dry skillet over medium heat for about 5-7 minutes until fragrant.
  3. In another pan, heat olive oil or butter over medium heat. Add chopped onion and garlic, sauté until translucent, about 3-4 minutes.
  4. Once the rice is cooked, fluff it with a fork and add sautéed aromatics, toasted hazelnuts, and dried apricots. Stir gently to combine.
  5. Add fresh herbs and toss everything together. Adjust seasoning with salt and pepper to taste.
  6. Serve warm or at room temperature, and enjoy!

Notes

For a nut-free version, substitute hazelnuts with sunflower seeds. This dish pairs beautifully with grilled chicken or roasted vegetables.
