Description

Delightful vegan peppers carved like jack-o’-lanterns, filled with a savory mixture of mushrooms, quinoa, and spices. A perfect festive treat for Halloween!


Ingredients

  • 4 medium bell peppers (orange, yellow, or green)
  • 1 cup fresh mushrooms (cremini or button), chopped
  • 2 cloves garlic, minced
  • 1 cup cooked quinoa or rice (brown rice for a healthier option)
  • 1 medium onion, chopped
  • 1/4 cup fresh parsley or cilantro, chopped
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 cup vegetable broth
  • Olive oil for sautéing
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the peppers by slicing off the tops and hollowing them out.
  3. In a skillet, heat olive oil and sauté onion and garlic until fragrant.
  4. Add chopped mushrooms and sauté for 5-7 minutes until tender.
  5. Stir in cooked quinoa or rice, season with salt, pepper, and herbs/spices of your choice. Mix well.
  6. Fill the hollowed-out peppers with the mixture.
  7. Place the filled peppers in a baking dish, drizzle olive oil on top, cover with caps, and cover with foil.
  8. Bake for 30 minutes, then remove foil and bake for an additional 10-15 minutes until tender.
  9. Cool slightly before serving.

Notes

Pack the filling well in the peppers for best flavor. Adjust spices based on personal preference.
