Delightful vegan peppers carved like jack-o’-lanterns, filled with a savory mixture of mushrooms, quinoa, and spices. A perfect festive treat for Halloween!

- 4 medium bell peppers (orange, yellow, or green)
- 1 cup fresh mushrooms (cremini or button), chopped
- 2 cloves garlic, minced
- 1 cup cooked quinoa or rice (brown rice for a healthier option)
- 1 medium onion, chopped
- 1/4 cup fresh parsley or cilantro, chopped
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 cup vegetable broth
- Olive oil for sautéing
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the peppers by slicing off the tops and hollowing them out.
- In a skillet, heat olive oil and sauté onion and garlic until fragrant.
- Add chopped mushrooms and sauté for 5-7 minutes until tender.
- Stir in cooked quinoa or rice, season with salt, pepper, and herbs/spices of your choice. Mix well.
- Fill the hollowed-out peppers with the mixture.
- Place the filled peppers in a baking dish, drizzle olive oil on top, cover with caps, and cover with foil.
- Bake for 30 minutes, then remove foil and bake for an additional 10-15 minutes until tender.
- Cool slightly before serving.
Notes
Pack the filling well in the peppers for best flavor. Adjust spices based on personal preference.
