- 1 fresh salmon fillet
- 1/4 cup brown sugar
- 1/4 cup sea salt
- Black pepper to taste
- Fresh herbs (dill, parsley, thyme, or tarragon)
- Zest and juice of 1 lemon
Instructions
- Brine the salmon by mixing 1 cup of water with brown sugar, sea salt, herbs, and lemon zest. Soak the salmon for at least 4 hours or overnight.
- Preheat the Traeger grill to 180°F.
- After brining, rinse the salmon and pat it dry with paper towels.
- Season the salmon with black pepper and additional herbs.
- Place the salmon skin-side down on the grill grates and smoke for 1 to 1.5 hours until the internal temperature reaches 145°F.
- Let the salmon rest for 10 minutes, then add a squeeze of fresh lemon juice before serving.
- Slice the salmon into portions and serve with your favorite sides.
