Ingredients

  • 1 fresh salmon fillet
  • 1/4 cup brown sugar
  • 1/4 cup sea salt
  • Black pepper to taste
  • Fresh herbs (dill, parsley, thyme, or tarragon)
  • Zest and juice of 1 lemon

Instructions

  1. Brine the salmon by mixing 1 cup of water with brown sugar, sea salt, herbs, and lemon zest. Soak the salmon for at least 4 hours or overnight.
  2. Preheat the Traeger grill to 180°F.
  3. After brining, rinse the salmon and pat it dry with paper towels.
  4. Season the salmon with black pepper and additional herbs.
  5. Place the salmon skin-side down on the grill grates and smoke for 1 to 1.5 hours until the internal temperature reaches 145°F.
  6. Let the salmon rest for 10 minutes, then add a squeeze of fresh lemon juice before serving.
  7. Slice the salmon into portions and serve with your favorite sides.

Notes

Allow the salmon to brine longer for a deeper flavor. Use a probe thermometer for perfect cooking.
