- 4 large egg whites
- 1 cup superfine granulated sugar
- 1 teaspoon cornstarch
- 1 teaspoon vinegar or lemon juice
- 1 cup heavy cream
- Fresh fruits (berries, passionfruit, peaches, or seasonal fruits)
Instructions
- Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper. Trace a circle about 8 inches in diameter on the parchment for shaping the meringue.
- In a stand mixer, beat the egg whites on medium speed until soft peaks form. Gradually add the sugar, increasing the speed to high until glossy and stiff peaks form (5 to 10 minutes).
- Fold in the cornstarch and vinegar gently until just combined.
- Dollop the meringue onto the prepared circle, sculpting a mound shape with a shallow well in the center.
- Bake for 1 to 1.5 hours until dry to the touch, then turn off the oven, crack the door, and allow to cool completely.
- Whip the heavy cream until soft peaks form; sweeten with powdered sugar if desired.
- Once cool, transfer the Pavlova to a serving platter, spoon whipped cream into the center, and top with fresh fruits. Drizzle with passionfruit syrup if desired.
- Serve immediately and enjoy the reactions!

Ensure your mixing bowl is clean for best egg white performance. Room temperature eggs whip better.
