Description

A vibrant and flavorful dish that combines tender chicken with fresh Thai basil, colorful vegetables, and a delightful balance of sweet, salty, and spicy notes.

Ingredients

Scale
  • 1 lb chicken (breast or thighs), cut into bite-sized pieces
  • 1 cup Thai basil leaves
  • 3 cloves garlic, minced
  • 23 fresh chilies, sliced (adjust to taste)
  • 3 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 cup green beans, trimmed
  • Juice of 1 lime
  • 2 tbsp oil (for cooking)

Instructions

  1. Prepare the Ingredients: Wash and chop the vegetables, and slice the chicken into bite-sized pieces.
  2. Heat the Pan: In a large skillet or wok, heat oil until shimmering.
  3. Stir-Fry the Chicken: Add chicken to the pan, brown without stirring for a couple of minutes, then stir occasionally until cooked through. Remove and set aside.
  4. Sauté Aromatics: In the same pan, add more oil and sauté garlic and chilies until fragrant. Do not burn the garlic.
  5. Add Vegetables: Toss in bell pepper, onions, and green beans. Stir-fry until tender-crisp.
  6. Combine and Season: Return chicken to the pan, add soy sauce, fish sauce, and lime juice. Stir in Thai basil and cook briefly until wilted.
  7. Serve and Enjoy: Plate over jasmine rice or rice noodles, garnished with lime wedges and crushed peanuts if desired.

Notes

High heat is key for stir-frying to retain freshness and crunch. Cook in batches if necessary to avoid overcrowding the pan.
