- 1 lb chicken (breast or thighs), cut into bite-sized pieces
- 1 cup Thai basil leaves
- 3 cloves garlic, minced
- 2–3 fresh chilies, sliced (adjust to taste)
- 3 tbsp soy sauce
- 1 tbsp fish sauce
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 cup green beans, trimmed
- Juice of 1 lime
- 2 tbsp oil (for cooking)
Instructions
- Prepare the Ingredients: Wash and chop the vegetables, and slice the chicken into bite-sized pieces.
- Heat the Pan: In a large skillet or wok, heat oil until shimmering.
- Stir-Fry the Chicken: Add chicken to the pan, brown without stirring for a couple of minutes, then stir occasionally until cooked through. Remove and set aside.
- Sauté Aromatics: In the same pan, add more oil and sauté garlic and chilies until fragrant. Do not burn the garlic.
- Add Vegetables: Toss in bell pepper, onions, and green beans. Stir-fry until tender-crisp.
- Combine and Season: Return chicken to the pan, add soy sauce, fish sauce, and lime juice. Stir in Thai basil and cook briefly until wilted.
- Serve and Enjoy: Plate over jasmine rice or rice noodles, garnished with lime wedges and crushed peanuts if desired.
Notes
High heat is key for stir-frying to retain freshness and crunch. Cook in batches if necessary to avoid overcrowding the pan.
