- 1 pound ground meat (beef or turkey)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 can (14.5 ounces) diced tomatoes
- 1 cup cornmeal
- 1 tablespoon baking powder
- 1 cup milk
- 2 eggs
- 1 cup shredded cheese (sharp cheddar or your choice)
- 1 can black beans or pinto beans (optional)
- 1 cup corn (fresh or frozen)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat a drizzle of oil over medium heat.
- Sauté the onions and garlic until fragrant, about 3–4 minutes.
- Add the ground meat, breaking it up with a wooden spoon, and cook until browned, about 5–7 minutes.
- Incorporate bell peppers, chili powder, cumin, and diced tomatoes; allow to simmer for about 10 minutes.
- In a bowl, combine cornmeal, baking powder, milk, eggs, and cheese to prepare the cornbread topping.
- Spread the meat mixture in a greased baking dish and top with the cornbread mixture.
- Bake for 25–30 minutes, or until the cornbread is golden brown.
- Allow to cool for a few minutes before serving.
Notes
Garnish with fresh cilantro, sour cream, jalapeños, or avocado slices for added flavor.
