Description

A comforting and flavorful casserole featuring seasoned ground meat, colorful peppers, and a fluffy cornbread topping.


Ingredients

  • 1 pound ground meat (beef or turkey)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup cornmeal
  • 1 tablespoon baking powder
  • 1 cup milk
  • 2 eggs
  • 1 cup shredded cheese (sharp cheddar or your choice)
  • 1 can black beans or pinto beans (optional)
  • 1 cup corn (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat a drizzle of oil over medium heat.
  3. Sauté the onions and garlic until fragrant, about 3–4 minutes.
  4. Add the ground meat, breaking it up with a wooden spoon, and cook until browned, about 5–7 minutes.
  5. Incorporate bell peppers, chili powder, cumin, and diced tomatoes; allow to simmer for about 10 minutes.
  6. In a bowl, combine cornmeal, baking powder, milk, eggs, and cheese to prepare the cornbread topping.
  7. Spread the meat mixture in a greased baking dish and top with the cornbread mixture.
  8. Bake for 25–30 minutes, or until the cornbread is golden brown.
  9. Allow to cool for a few minutes before serving.

Notes

Garnish with fresh cilantro, sour cream, jalapeños, or avocado slices for added flavor.
