Ingredients

  • 4 large Russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 pound ground beef or turkey (optional)
  • 1 packet taco seasoning
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheese
  • 1/4 cup sour cream
  • 1 jalapeño, sliced
  • 1/4 cup fresh cilantro

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub and poke holes in each potato with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt.
  4. Bake in the preheated oven for about 45 minutes or until fork-tender.
  5. While the potatoes are baking, brown the ground meat in a skillet over medium heat.
  6. Stir in the taco seasoning, adding water as necessary.
  7. Once the potatoes are cooked, slice them open and fluff the insides with a fork.
  8. Top them with the seasoned meat and desired toppings.
  9. Serve hot with a fresh salad or salsa.

Notes

For extra crispiness, broil the potatoes for the last 5 minutes of baking. A sprinkle of lime juice can enhance flavors.
