- 4 large Russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 pound ground beef or turkey (optional)
- 1 packet taco seasoning
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheese
- 1/4 cup sour cream
- 1 jalapeño, sliced
- 1/4 cup fresh cilantro
Instructions
- Preheat the oven to 400°F (200°C).
- Scrub and poke holes in each potato with a fork.
- Rub the potatoes with olive oil and sprinkle with salt.
- Bake in the preheated oven for about 45 minutes or until fork-tender.
- While the potatoes are baking, brown the ground meat in a skillet over medium heat.
- Stir in the taco seasoning, adding water as necessary.
- Once the potatoes are cooked, slice them open and fluff the insides with a fork.
- Top them with the seasoned meat and desired toppings.
- Serve hot with a fresh salad or salsa.
Notes
For extra crispiness, broil the potatoes for the last 5 minutes of baking. A sprinkle of lime juice can enhance flavors.
