Description
Deliciously rich shortbread cookies filled with chocolate chips and crunchy toffee bits, perfect for every occasion.
Ingredients
Scale
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar (optional)
- 2 cups all-purpose flour
- 1 cup semi-sweet or dark chocolate chips
- 1/2 cup toffee bits
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream the softened butter and granulated sugar in a mixing bowl until light and fluffy, about 3 minutes.
- Add in the vanilla extract and mix well.
- In a separate bowl, whisk together the all-purpose flour and salt, then slowly mix this into the butter-sugar mixture until it just combines.
- Gently fold in the chocolate chips and toffee bits until evenly distributed.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, leaving space between each cookie.
- Bake for 12-15 minutes or until the edges are lightly golden, allowing the centers to cool slightly before transferring to a wire rack.
- Store in an airtight container to maintain freshness.
Notes
For a vegan option, substitute with dairy-free butter and mini chocolate chips. Allow cookies to cool completely before tasting for the best flavor.
