Description

A warm and tender cake infused with the sweet-tart essence of fresh apples, cinnamon, and cardamom, reminiscent of family gatherings.


Ingredients

  • 34 medium-sized apples (Granny Smith, Honeycrisp, or Fuji)
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ¾ cup unsalted butter, softened
  • 3 large eggs
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon ground cardamom
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 1 tablespoon sugar (for apple tossing)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or a springform pan. Line the base with parchment paper.
  2. Peel and slice the apples, then toss them with cinnamon and a tablespoon of sugar. Set aside.
  3. Cream together the softened butter and granulated sugar until fluffy.
  4. Add the eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla extract.
  5. In another bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Gradually mix this into the wet ingredients, alternating with the milk until just combined.
  6. Gently fold in the prepared apples and pour the batter into the prepared pan.
  7. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool before transferring to a wire rack.
  8. Dust with powdered sugar or serve with whipped cream or ice cream.

Notes

Use room temperature ingredients for a smoother batter. Don’t skip the resting time for the apples to enhance moisture.
