Ingredients

  • Fresh Carrots
  • Honey
  • Apple Cider Vinegar
  • Red Pepper Flakes or Fresh Chili
  • Salt
  • Garlic
  • Herbs (Optional: Thyme or Dill)

Instructions

  1. Wash and peel the carrots, then cut into julienne strips or rounds.
  2. In a saucepan, combine equal parts apple cider vinegar and honey, bring to a gentle simmer, add garlic and red pepper flakes, and stir until dissolved (about 5 minutes).
  3. Pour the brine over the prepared carrots in a clean glass jar, leaving some space for herbs if desired. Let it cool to room temperature.
  4. Seal the jar and refrigerate. Allow the carrots to pickle for at least 24 hours, ideally 3-5 days for maximum flavor.
  5. Serve the pickled carrots alongside grilled meats, tacos, or enjoy as a standalone snack.

Notes
