Ingredients
- Fresh Carrots
- Honey
- Apple Cider Vinegar

Instructions
- Wash and peel the carrots, then cut into julienne strips or rounds.
- In a saucepan, combine equal parts apple cider vinegar and honey, bring to a gentle simmer, add garlic and red pepper flakes, and stir until dissolved (about 5 minutes).
- Pour the brine over the prepared carrots in a clean glass jar, leaving some space for herbs if desired. Let it cool to room temperature.
- Seal the jar and refrigerate. Allow the carrots to pickle for at least 24 hours, ideally 3-5 days for maximum flavor.
- Serve the pickled carrots alongside grilled meats, tacos, or enjoy as a standalone snack.
