Ingredients

- 4 boneless, skinless chicken breasts or thighs
- 2 ripe mangoes, sliced
- ¼ cup olive oil
- Juice of 2 limes
- 2 tablespoons honey or brown sugar
- 3 cloves garlic, minced
- 1–2 teaspoons red chili powder
- Salt, to taste
- Cilantro or green onions, for garnish
Instructions
- In a mixing bowl, combine olive oil, lime juice, honey, garlic, and chili powder.
- Place the chicken in a resealable bag, pour marinade over, and seal. Marinate for at least 30 minutes, preferably up to 2 hours.
- Slice the mango into wedges, drizzle with oil, and sprinkle with salt.
- Preheat the grill to medium-high heat.
- Grill the chicken for 6-7 minutes on each side or until internal temperature reaches 165°F.
- Add mango wedges to the grill during the last couple of minutes, turning once until caramelized.
- Let the chicken rest for 5 minutes before slicing and serve warm, garnished with cilantro or green onions.
Notes
For a vegetarian option, replace chicken with tofu and use pineapple instead of mango.
