Description

A flavorful dish combining juicy grilled chicken with sweet mango and zesty spices, perfect for family gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 2 ripe mangoes, sliced
  • ¼ cup olive oil
  • Juice of 2 limes
  • 2 tablespoons honey or brown sugar
  • 3 cloves garlic, minced
  • 12 teaspoons red chili powder
  • Salt, to taste
  • Cilantro or green onions, for garnish

Instructions

  1. In a mixing bowl, combine olive oil, lime juice, honey, garlic, and chili powder.
  2. Place the chicken in a resealable bag, pour marinade over, and seal. Marinate for at least 30 minutes, preferably up to 2 hours.
  3. Slice the mango into wedges, drizzle with oil, and sprinkle with salt.
  4. Preheat the grill to medium-high heat.
  5. Grill the chicken for 6-7 minutes on each side or until internal temperature reaches 165°F.
  6. Add mango wedges to the grill during the last couple of minutes, turning once until caramelized.
  7. Let the chicken rest for 5 minutes before slicing and serve warm, garnished with cilantro or green onions.

Notes

For a vegetarian option, replace chicken with tofu and use pineapple instead of mango.
