- 1 lb andouille or spicy Italian sausage
- 3 medium Yukon Gold or Russet potatoes, diced
- 1 medium onion, diced
- 2 stalks celery, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream or milk
- 1 tbsp Cajun seasoning
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat a splash of olive oil over medium heat. Add the diced onions, celery, and bell pepper, sauté for about 5 minutes until softened.
- Slice the sausage and add it to the pot, cooking until browned, about 5-7 minutes.
- Stir in minced garlic, Cajun seasoning, thyme, and bay leaves, cooking for 1-2 minutes until fragrant.
- Add diced potatoes and broth, bring to a gentle boil, then reduce to a simmer and cover. Cook for about 20 minutes until the potatoes are tender.
- Remove bay leaves, stir in heavy cream or milk, and simmer for an additional 5 minutes.
- Season with salt and pepper to taste and serve with fresh herbs or green onions if desired.
Notes
For a lighter version, substitute sausage with turkey or add chickpeas for a vegetarian option.
