Ingredients

  • 1 lb andouille or spicy Italian sausage
  • 3 medium Yukon Gold or Russet potatoes, diced
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or milk
  • 1 tbsp Cajun seasoning
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Add the diced onions, celery, and bell pepper, sauté for about 5 minutes until softened.
  2. Slice the sausage and add it to the pot, cooking until browned, about 5-7 minutes.
  3. Stir in minced garlic, Cajun seasoning, thyme, and bay leaves, cooking for 1-2 minutes until fragrant.
  4. Add diced potatoes and broth, bring to a gentle boil, then reduce to a simmer and cover. Cook for about 20 minutes until the potatoes are tender.
  5. Remove bay leaves, stir in heavy cream or milk, and simmer for an additional 5 minutes.
  6. Season with salt and pepper to taste and serve with fresh herbs or green onions if desired.

Notes

For a lighter version, substitute sausage with turkey or add chickpeas for a vegetarian option.
