Instructions
- In a large pot, heat olive oil over medium heat. Add diced chorizo and brown it, rendering its oils.
- Toss in the diced onion and minced garlic, cooking until fragrant and translucent.
- Add the diced carrots and sauté until they start to soften.
- Stir in the diced potatoes, coating them in the chorizo and aromatics.
- Pour in the broth and bring the mixture to a gentle boil. Let it simmer until potatoes are tender, approximately 20-25 minutes.
- If desired, blend a cup of the soup until smooth and return it for a creamier texture.
- Season with salt, pepper, and a sprinkle of smoked paprika. Serve hot with fresh parsley on top.
