Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced chorizo and brown it, rendering its oils.
  2. Toss in the diced onion and minced garlic, cooking until fragrant and translucent.
  3. Add the diced carrots and sauté until they start to soften.
  4. Stir in the diced potatoes, coating them in the chorizo and aromatics.
  5. Pour in the broth and bring the mixture to a gentle boil. Let it simmer until potatoes are tender, approximately 20-25 minutes.
