Description

A comforting dish featuring tender chicken thighs smothered in a rich, flavorful sauce, perfect for family gatherings.


Ingredients

  • 4 bone-in chicken thighs (or boneless)
  • 2 tablespoons olive oil or butter
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 teaspoon fresh thyme (or dried)
  • 1 teaspoon fresh rosemary (or dried)
  • 1 teaspoon smoked paprika
  • Optional: 1 cup carrots or bell peppers, diced

Instructions

  1. Pat chicken thighs dry and season with salt, pepper, and smoked paprika.
  2. In a large skillet, heat olive oil or butter over medium heat. Sear chicken thighs skin-side down for 5-7 minutes until golden brown, then flip and cook for another 5 minutes. Remove from skillet and set aside.
  3. In the same skillet, add diced onion and minced garlic. Sauté until translucent, about 3-4 minutes.
  4. Add chicken broth and fresh herbs, scraping up any bits stuck to the pan. Bring to a gentle simmer.
  5. Return chicken thighs to skillet, spoon sauce over them, cover, and let simmer on low heat for 20-25 minutes.
  6. Once chicken reaches an internal temperature of 165°F, adjust seasoning if needed. For thicker sauce, remove chicken and let sauce reduce over high heat for a few minutes.

Notes

Avoid overcrowding the skillet during searing for better flavor, and allow chicken to rest before serving.
