- 4 bone-in chicken thighs (or boneless)
- 2 tablespoons olive oil or butter
- 1 onion, diced
- 4 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1 teaspoon fresh thyme (or dried)
- 1 teaspoon fresh rosemary (or dried)
- 1 teaspoon smoked paprika
- Optional: 1 cup carrots or bell peppers, diced
Instructions
- Pat chicken thighs dry and season with salt, pepper, and smoked paprika.
- In a large skillet, heat olive oil or butter over medium heat. Sear chicken thighs skin-side down for 5-7 minutes until golden brown, then flip and cook for another 5 minutes. Remove from skillet and set aside.
- In the same skillet, add diced onion and minced garlic. Sauté until translucent, about 3-4 minutes.
- Add chicken broth and fresh herbs, scraping up any bits stuck to the pan. Bring to a gentle simmer.
- Return chicken thighs to skillet, spoon sauce over them, cover, and let simmer on low heat for 20-25 minutes.
- Once chicken reaches an internal temperature of 165°F, adjust seasoning if needed. For thicker sauce, remove chicken and let sauce reduce over high heat for a few minutes.
Notes
Avoid overcrowding the skillet during searing for better flavor, and allow chicken to rest before serving.
