- 4 bone-in, skin-on chicken thighs
- 1 sweet or yellow onion, sliced
- 8 oz fresh button or cremini mushrooms, sliced
- 3 cloves fresh garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups low-sodium chicken broth
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh herbs like thyme or rosemary (optional)
Instructions
- Pat the chicken dry and season generously with salt and pepper.
- Melt butter in a skillet over medium-high heat, then brown the chicken thighs skin-side down for 5-7 minutes until crispy. Remove and set aside.
- Sauté onions and garlic in the same skillet for 3-4 minutes until soft. Add mushrooms and cook until golden.
- Sprinkle flour over the vegetables and stir for 1 minute to cook off the raw flavor.
- Gradually pour in chicken broth, stirring to avoid lumps. Simmer for 2-3 minutes until thickened.
- Return chicken to the skillet, skin-side up. Cover and simmer for 20-25 minutes until cooked through.
- Adjust seasoning, adding an extra tablespoon of butter right before serving for added richness.
Notes
Serve over white rice or creamy mashed potatoes with a side of roasted vegetables. Fresh parsley adds a nice touch before serving.
