- 4 cups vegetable or fish broth

- 2 tbsp fresh dill, chopped
- Juice of 1 lemon
- Salt and pepper, to taste

Instructions
- Melt butter in a large pot over medium heat. Add chopped leeks and minced garlic, cooking until soft, about 5 minutes.
- Stir in diced potatoes and pour in broth. Bring to a gentle simmer, cooking until potatoes are tender, about 15-20 minutes.
- Add heavy cream and stir until combined, creating a rich chowder.
- Gently fold in smoked salmon and fresh dill. Squeeze fresh lemon juice before serving.
- Taste and adjust seasoning with salt and pepper. Serve hot, garnished with additional herbs.
Notes
For a lighter version, substitute heavy cream with unsweetened almond milk and use cooked crab or shrimp instead of smoked salmon.
