Description

A comforting slow-cooked casserole with layers of ground beef, vegetables, and cheesy mashed potatoes.


Ingredients

  • 2 cups diced potatoes (russet or Yukon gold)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1 cup diced mushrooms
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth (or vegetable broth)
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • Fresh herbs (rosemary or thyme) for garnish

Instructions

  1. Prep the Ingredients: Dice the onions and carrots, mince the garlic, and chop the mushrooms.
  2. Sauté the Aromatics: In a skillet, heat oil and sauté the onions and garlic until translucent. Add the mushrooms and cook until browned.
  3. Brown the Meat: In the same skillet, add the ground beef, season with salt and pepper, and cook until browned.
  4. Combine the Goodness: Transfer sautéed ingredients to the slow cooker. Layer in the fresh vegetables, herbs, and any additional spices. Mix to combine.
  5. Prepare the Potatoes: Boil the potatoes until fork-tender, then mash with butter, milk, and salt until creamy.
  6. Assemble the Layers: Spread the meat mixture in the slow cooker and dollop the mashed potatoes on top. Sprinkle cheese over the potatoes.
  7. Slow Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours until cheese is bubbling and golden.
  8. Garnish and Serve: Let it cool slightly before serving, garnish with fresh herbs.

Notes

For a lighter version, swap ground beef for turkey or a plant-based alternative. Customize vegetables based on preference.
