- 2 cups diced potatoes (russet or Yukon gold)
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup diced carrots
- 1 cup frozen peas
- 1 cup diced mushrooms
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup beef broth (or vegetable broth)
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- Fresh herbs (rosemary or thyme) for garnish
Instructions
- Prep the Ingredients: Dice the onions and carrots, mince the garlic, and chop the mushrooms.
- Sauté the Aromatics: In a skillet, heat oil and sauté the onions and garlic until translucent. Add the mushrooms and cook until browned.
- Brown the Meat: In the same skillet, add the ground beef, season with salt and pepper, and cook until browned.
- Combine the Goodness: Transfer sautéed ingredients to the slow cooker. Layer in the fresh vegetables, herbs, and any additional spices. Mix to combine.
- Prepare the Potatoes: Boil the potatoes until fork-tender, then mash with butter, milk, and salt until creamy.
- Assemble the Layers: Spread the meat mixture in the slow cooker and dollop the mashed potatoes on top. Sprinkle cheese over the potatoes.
- Slow Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours until cheese is bubbling and golden.
- Garnish and Serve: Let it cool slightly before serving, garnish with fresh herbs.
Notes
For a lighter version, swap ground beef for turkey or a plant-based alternative. Customize vegetables based on preference.
