Ingredients

  • 34 pounds chuck roast
  • 1 cup barbecue sauce
  • 1 yellow onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 2 tsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp black pepper
  • Salt to taste

Instructions

  1. Pat the chuck roast dry with paper towels. Rub salt, pepper, and any desired spices all over the meat. Let it sit for about 30 minutes.
  2. In a hot skillet, add a drizzle of oil. Sear the seasoned roast on all sides until golden brown.
  3. Place the sautéed meat in your slow cooker and surround it with sliced onions and garlic. Pour the barbecue sauce over the roast.
  4. Pour the beef broth into the slow cooker, making sure there’s enough liquid to simmer the meat.
  5. Cover and set the slow cooker on low for 8 hours or high for 4 hours.
  6. Once the roast is tender, shred the beef using two forks and mix it back into the sauce.
  7. Serve the pulled beef on sandwiches, tacos, or over rice, adding coleslaw for crunch.
