- 3–4 pounds chuck roast
- 1 cup barbecue sauce
- 1 yellow onion, sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 2 tsp paprika
- 1 tsp cayenne pepper
- 1 tsp black pepper
- Salt to taste
Instructions
- Pat the chuck roast dry with paper towels. Rub salt, pepper, and any desired spices all over the meat. Let it sit for about 30 minutes.
- In a hot skillet, add a drizzle of oil. Sear the seasoned roast on all sides until golden brown.
- Place the sautéed meat in your slow cooker and surround it with sliced onions and garlic. Pour the barbecue sauce over the roast.
- Pour the beef broth into the slow cooker, making sure there’s enough liquid to simmer the meat.
- Cover and set the slow cooker on low for 8 hours or high for 4 hours.
- Once the roast is tender, shred the beef using two forks and mix it back into the sauce.
- Serve the pulled beef on sandwiches, tacos, or over rice, adding coleslaw for crunch.
Notes
For a leaner option, you can use brisket or pork shoulder instead of chuck roast. Feel free to adjust spices according to your preference.
