Ingredients

  • 2 tablespoons butter
  • 1 cup heavy cream
  • Cajun seasoning
  • 3 cloves garlic, minced

Instructions

  1. Pat the sea scallops dry with paper towels and season both sides with salt and Cajun seasoning.
  2. In a hot skillet, melt 2 tablespoons of butter until frothy. Sear the scallops in a single layer for 2-3 minutes without moving them.
  3. Remove the scallops and set aside. In the same skillet, add 1 tablespoon of butter and minced garlic. Sauté until fragrant, then pour in the heavy cream and stir until it thickens slightly.
  4. Stir in additional Cajun seasoning to taste, then return the scallops to the skillet for a minute to soak in the flavor.
  5. Serve the scallops over creamy polenta, rice, or sautéed greens, drizzling the spicy Cajun cream sauce generously over the top.
