Description

A comforting and hearty meal featuring roasted sweet potatoes stuffed with savory ground turkey and aromatic vegetables, making it a family favorite.


Ingredients

  • 4 medium sweet potatoes
  • 1 lb ground turkey
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup vegetable or chicken broth
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp Italian seasoning
  • Optional: 1 cup bell peppers or spinach, chopped
  • Optional: 1 cup shredded cheese (cheddar or feta)
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and prick the sweet potatoes with a fork, then roast for 45-60 minutes until tender.
  3. In a skillet, heat olive oil and sauté the onion for 3-4 minutes until translucent, then add minced garlic and cook for 1 minute.
  4. Add ground turkey, breaking it apart, and cook until no longer pink. Season with spices and add broth. Simmer to meld flavors.
  5. If using additional vegetables, sauté them until tender and mix into the turkey filling.
  6. Once sweet potatoes are done, cut them in half and fluff the insides with a fork. Stuff generously with the turkey mixture.
  7. If desired, sprinkle cheese on top and bake for an additional 10 minutes until melted.
  8. Garnish with fresh herbs or a drizzle of Greek yogurt and serve warm.

Notes
