- 4 medium sweet potatoes
- 1 lb ground turkey
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup vegetable or chicken broth
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp Italian seasoning
- Optional: 1 cup bell peppers or spinach, chopped
- Optional: 1 cup shredded cheese (cheddar or feta)
- Olive oil for sautéing
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and prick the sweet potatoes with a fork, then roast for 45-60 minutes until tender.
- In a skillet, heat olive oil and sauté the onion for 3-4 minutes until translucent, then add minced garlic and cook for 1 minute.
- Add ground turkey, breaking it apart, and cook until no longer pink. Season with spices and add broth. Simmer to meld flavors.
- If using additional vegetables, sauté them until tender and mix into the turkey filling.
- Once sweet potatoes are done, cut them in half and fluff the insides with a fork. Stuff generously with the turkey mixture.
- If desired, sprinkle cheese on top and bake for an additional 10 minutes until melted.
- Garnish with fresh herbs or a drizzle of Greek yogurt and serve warm.
Notes
