Ingredients

  • 1 pound Italian sausage (spicy or sweet)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced (cremini or baby bella)
  • 4 cups chicken or vegetable broth
  • 1 can (15 ounces) tomato sauce
  • 1 can (15 ounces) crushed tomatoes
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add sausage and brown until no longer pink.
  2. Add the chopped onion and minced garlic; sauté until translucent.
  3. Toss in mushrooms and cook until they release moisture.
  4. Pour in the broth and both types of tomatoes, bringing to a gentle boil.
  5. Add the lasagna noodles and cook until tender.
  6. Stir in ricotta cheese until fully blended.
  7. Finish with fresh basil and season to taste before serving.
