Description

Ingredients

  • 2 potatoes, diced
  • 4 cups vegetable or chicken broth
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 cup cream or coconut milk
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Optional: smoked paprika for added flavor

Instructions

  1. Heat a splash of olive oil in a large pot over medium heat.
  2. Add chopped onion, minced garlic, and diced celery. Sauté until fragrant, about 3-5 minutes.
  3. Stir in sliced carrots and diced potatoes, coating them with the oil and aromatics.
  4. Add vegetable or chicken broth and bring to a gentle boil, then reduce to simmer.
  5. Add fresh salmon fillets, cooking for about 10 minutes until flaky and opaque.
  6. Stir in cream or coconut milk for a rich texture.
  7. Add chopped dill, parsley, and lemon juice. Adjust seasoning with salt and pepper.
  8. Serve warm, garnished with fresh herbs and paired with crusty bread or salad.

Notes

For a lighter option, substitute cream with coconut milk. Feel free to add other vegetables for additional texture.
