Ingredients

  • 4 sprigs Fresh Rosemary (or 1 tablespoon dried rosemary)
  • 4 cloves Garlic, minced (or 1 teaspoon garlic powder)
  • 1/4 cup Honey (or maple syrup)
  • 1/4 cup Balsamic Vinegar (or red wine vinegar)
  • 1/4 cup Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. Prepare the Marinade: Combine garlic, rosemary, honey, and balsamic vinegar. Whisk in olive oil and season with salt and pepper.
  2. Marinate the Lamb: Place lamb shoulder in a dish and pour marinade over. Refrigerate for 4 hours or overnight.
  3. Preheat the Oven: Set the oven to 325°F (165°C).
  4. Sear the Lamb: Heat a skillet, sear lamb on all sides for 3-4 minutes until golden brown.
  5. Roast the Lamb: Transfer to a roasting pan, baste with marinade, and cover with foil. Roast for 3-4 hours until tender.
  6. Rest and Serve: Let rest for 20-30 minutes before slicing.

Notes

Allowing the lamb to marinate overnight infuses more flavor. Baste periodically during roasting to keep it moist.
