A comforting Roasted Tomato Soup that combines sweet caramelized tomatoes with garlic and herbs, perfect for warming the heart and nurturing the soul.

- 2 pounds ripe tomatoes (plum or vine-ripened)
- 1 medium yellow onion, chopped
- 4 cloves garlic, unpeeled
- 2 tablespoons olive oil
- 2 cups vegetable or chicken broth
- Fresh basil, for garnish
- Salt and pepper, to taste
- 1/2 cup cream or milk (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and slice the tomatoes in half. Arrange them cut-side up on a baking sheet lined with parchment paper.
- Drizzle the tomatoes with olive oil and sprinkle with salt, pepper, and unpeeled garlic.
- Roast in the oven for 25-30 minutes or until caramelized and starting to burst.
- In a heavy pot over medium heat, heat some olive oil and sauté the chopped onion until soft and translucent, about 5-7 minutes.
- Add the roasted tomatoes and garlic (squeezed out of their skins) to the pot along with the broth. Simmer for about 10 minutes.
- Use an immersion blender to purée the soup until smooth. Adjust thickness with more broth if desired.
- Check for seasoning, and if you want creaminess, stir in the cream or milk before serving.
- Ladle into bowls and garnish with fresh basil and a drizzle of olive oil.
Notes
For a dairy-free option, use coconut milk instead of cream. You can substitute canned tomatoes if fresh ones aren’t available.
