Ingredients
Scale
- 1 cup corned beef, finely chopped
- 1/2 cup cream cheese
- 1/2 cup Swiss cheese, shredded
- 1/2 cup sauerkraut, drained
- 1/2 cup breadcrumbs
- 1 tsp garlic powder
- 1 tsp onion powder

Instructions
- In a mixing bowl, combine finely chopped corned beef, cream cheese, Swiss cheese, and sauerkraut. Mix until well combined.
- Add garlic powder, onion powder, paprika, salt, and pepper, mixing thoroughly.
- Use your hands to scoop about a tablespoon of the mixture, rolling it into balls. Place them on a baking sheet lined with parchment paper.
- In a shallow bowl, add breadcrumbs, then roll each ball in the crumbs until fully coated.
- In a large skillet, heat vegetable oil over medium heat until sizzling hot.
- Carefully add the balls to the hot oil in batches, frying until golden brown, about 3–4 minutes per side.
- Transfer to a paper towel-lined plate to drain excess oil.
- For the Spicy Thousand Island, mix mayonnaise, ketchup, diced pickles, hot sauce, and garlic powder.
- Serve warm, drizzled with the spicy dressing or on the side for dipping.
Notes
For a healthier option, try baking at 400°F for about 20–25 minutes, flipping halfway through.
