Description

Delicious bite-sized Reuben Balls filled with corned beef, Swiss cheese, and sauerkraut, served with a spicy Thousand Island dressing.


Ingredients

  • 1 cup corned beef, finely chopped
  • 1/2 cup cream cheese
  • 1/2 cup Swiss cheese, shredded
  • 1/2 cup sauerkraut, drained
  • 1/2 cup breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a mixing bowl, combine finely chopped corned beef, cream cheese, Swiss cheese, and sauerkraut. Mix until well combined.
  2. Add garlic powder, onion powder, paprika, salt, and pepper, mixing thoroughly.
  3. Use your hands to scoop about a tablespoon of the mixture, rolling it into balls. Place them on a baking sheet lined with parchment paper.
  4. In a shallow bowl, add breadcrumbs, then roll each ball in the crumbs until fully coated.
  5. In a large skillet, heat vegetable oil over medium heat until sizzling hot.
  6. Carefully add the balls to the hot oil in batches, frying until golden brown, about 3–4 minutes per side.
  7. Transfer to a paper towel-lined plate to drain excess oil.
  8. For the Spicy Thousand Island, mix mayonnaise, ketchup, diced pickles, hot sauce, and garlic powder.
  9. Serve warm, drizzled with the spicy dressing or on the side for dipping.

Notes

For a healthier option, try baking at 400°F for about 20–25 minutes, flipping halfway through.
