Description
Delightful red velvet cookies topped with creamy and tangy cream cheese frosting, perfect for any occasion.
Ingredients
Scale
- 1 cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 tablespoon unsweetened cocoa powder
- 2 cups all-purpose flour
- 1/2 cup buttermilk (or milk + 1 tsp vinegar)
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 tablespoon red food coloring
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter, granulated sugar, and brown sugar until fluffy (about 2-3 minutes).
- Add the egg and mix in the buttermilk and vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, and baking soda. Gradually combine this with the wet mixture until just combined.
- Add red food coloring until the desired hue is achieved.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes, until edges are set and tops look dry.
- Let cookies cool before preparing the frosting by beating cream cheese and butter until smooth, then add powdered sugar to taste.
- Spread or pipe frosting onto cooled cookies.
Notes
Chilling the dough for 30 minutes before baking can result in thicker cookies. Avoid over-mixing to maintain a soft texture.
