Description

These delightful Raspberry Linzer Cookies combine tender, buttery dough with a tangy raspberry filling, making them a nostalgic treat perfect for holiday gatherings.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup ground almonds or hazelnuts
  • 1 tsp vanilla extract
  • 1/2 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add in the powdered sugar and mix until combined.
  4. Gradually sift in the all-purpose flour and ground nuts; mix until just combined.
  5. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  6. Roll out the chilled dough on a lightly floured surface to about 1/8 inch thickness. Use cookie cutters to create shapes, cutting out centers for half of them.
  7. Place the cookies on the baking sheet and bake for 10-12 minutes or until lightly golden.
  8. Let the cookies cool, then spread raspberry jam on the full cookies and top them with the cutout cookies. Dust with powdered sugar before serving.
