- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup ground almonds or hazelnuts
- 1 tsp vanilla extract
- 1/2 cup raspberry jam
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Add in the powdered sugar and mix until combined.
- Gradually sift in the all-purpose flour and ground nuts; mix until just combined.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Roll out the chilled dough on a lightly floured surface to about 1/8 inch thickness. Use cookie cutters to create shapes, cutting out centers for half of them.
- Place the cookies on the baking sheet and bake for 10-12 minutes or until lightly golden.
- Let the cookies cool, then spread raspberry jam on the full cookies and top them with the cutout cookies. Dust with powdered sugar before serving.
