Ingredients

  • 6 slices soft white or whole wheat bread
  • 1 cup pumpkin purée
  • 2 tablespoons sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 tablespoon butter
  • Powdered sugar for dusting
  • Maple syrup for serving

Instructions

  1. Trim the crusts off the bread slices and flatten each slice with a rolling pin.
  2. In a bowl, mix pumpkin purée, sugar, cinnamon, nutmeg, and vanilla until smooth.
  3. Spread about a tablespoon of the filling onto the flattened bread slice and roll it up securely.
  4. Whisk together eggs, milk, and a pinch of salt in another bowl.
  5. Melt butter in a skillet over medium heat.
  6. Drench each roll-up in the egg mixture and place them in the skillet.
  7. Cook each side for about 2-3 minutes until golden brown.
  8. Dust with powdered sugar and drizzle with maple syrup before serving.
