- 1 cup pumpkin purée
- 2 tablespoons sugar

- 1/2 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup whole milk
- 1 tablespoon butter
- Powdered sugar for dusting
- Maple syrup for serving
Instructions
- Trim the crusts off the bread slices and flatten each slice with a rolling pin.
- In a bowl, mix pumpkin purée, sugar, cinnamon, nutmeg, and vanilla until smooth.
- Spread about a tablespoon of the filling onto the flattened bread slice and roll it up securely.
- Whisk together eggs, milk, and a pinch of salt in another bowl.
- Melt butter in a skillet over medium heat.
- Drench each roll-up in the egg mixture and place them in the skillet.
- Cook each side for about 2-3 minutes until golden brown.
- Dust with powdered sugar and drizzle with maple syrup before serving.
