Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.
- Cut the cold butter into small cubes and add it to the dry ingredients. Work the butter into the flour until it resembles coarse crumbs.
- Create a well in the center and whisk together the egg, milk, and peppermint extract. Pour this mixture into the well and stir until just combined.
- Fold in the white chocolate chips until evenly distributed.
- Turn the dough onto a floured surface, knead gently, and form into a disc about 1 inch thick. Cut into wedges or use a round cutter.
- Place on the baking sheet and bake for 15-18 minutes until golden brown.
- Cool on a wire rack before serving.
