- 1 lb beef (sirloin or flank steak), cubed
- 2 bell peppers (red, green, or yellow), sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 8 oz mushrooms (cremini or button), sliced
- 4 cups beef broth
- 2 tbsp soy sauce
- 2 tbsp olive oil
- 2 tsp fresh thyme
- 2 bay leaves
- 1 tsp black pepper
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onions and garlic, sauté until translucent.
- Add cubed steak, searing until golden brown on all sides.
- Toss in sliced bell peppers and mushrooms; sauté for a few minutes.
- Add beef broth and soy sauce, bring to a gentle boil.
- Add thyme, bay leaves, and black pepper. Lower heat and let simmer for 30-40 minutes.
- Before serving, taste and adjust seasoning, then remove bay leaves and thyme sprigs.
- Ladle soup into warm bowls and garnish with fresh herbs if desired.
Notes
For a vegetarian version, substitute beef with hearty chunks of tofu and maintain the flavorful broth and veggies.
