Ingredients

  • 1 lb beef (sirloin or flank steak), cubed
  • 2 bell peppers (red, green, or yellow), sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 8 oz mushrooms (cremini or button), sliced
  • 4 cups beef broth
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 2 tsp fresh thyme
  • 2 bay leaves
  • 1 tsp black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onions and garlic, sauté until translucent.
  2. Add cubed steak, searing until golden brown on all sides.
  3. Toss in sliced bell peppers and mushrooms; sauté for a few minutes.
  4. Add beef broth and soy sauce, bring to a gentle boil.
  5. Add thyme, bay leaves, and black pepper. Lower heat and let simmer for 30-40 minutes.
  6. Before serving, taste and adjust seasoning, then remove bay leaves and thyme sprigs.
  7. Ladle soup into warm bowls and garnish with fresh herbs if desired.

Notes

For a vegetarian version, substitute beef with hearty chunks of tofu and maintain the flavorful broth and veggies.
