Description

Delightful cherry bars with a buttery, crumbly crust and a tart cherry filling, perfect for family gatherings and nostalgic moments.


Ingredients

  • 2 cups fresh cherries, pitted and chopped
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 baking dish lightly with cooking spray or butter.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla and almond extracts.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
  5. Fold in the chopped cherries evenly throughout the batter.
  6. Pour the batter into the prepared baking dish, spreading it evenly. Bake for 25-30 minutes or until the top is golden brown and a toothpick comes out clean.
  7. Allow to cool for 15 minutes before transferring to a wire rack. Dust with powdered sugar before serving.

Notes

Use frozen cherries if fresh ones aren’t available. For an egg-free version, substitute eggs with applesauce.
