- 1 ½ cups graham cracker crumbs
- ½ cup melted butter
- ¼ cup granulated sugar
- 16 ounces cream cheese, softened
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup whipped cream
- Optional flavorings: peppermint extract, cocoa powder, orange zest
Instructions
- Prepare the crust: In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press evenly into the bottom of mini cheesecake cups or muffin tins lined with paper liners. Freeze to firm up.
- Make the filling: In a large bowl, beat cream cheese, sugar, and vanilla extract with an electric mixer until smooth. Fold in whipped cream.
- Fill the cups: Spoon the cream cheese mixture over the crusts and smooth the tops.
- Chill: Refrigerate for at least 4 hours or overnight until set.
- Serve: Remove from tins, peel off liners, and top with whipped cream and fresh berries.
Notes
Use parchment paper in muffin tins for easier removal. For easy cleanup, line the bottom of the muffin tin with plastic wrap.
