Instructions
- Prepare the base by crushing graham crackers or cookies into fine crumbs and mixing with melted butter.
- Press the crust mixture firmly into the bottom of a mini muffin pan or molds and chill for 10 minutes.
- In a bowl, combine cream cheese and powdered sugar until smooth. Then add vanilla extract.
- Whip heavy cream until stiff peaks form, then fold it into the cream cheese mixture along with the chocolate chips.
- Spoon the cheesecake mixture into the crusts and smooth the tops if desired.
- Chill for at least 1 hour or until firm.
- Serve chilled, garnished with festive toppings if desired.
