Ingredients

  • 1 cup heavy whipping cream
  • 1 cup graham crackers or buttery cookies, crushed

Instructions

  1. Prepare the base by crushing graham crackers or cookies into fine crumbs and mixing with melted butter.
  2. Press the crust mixture firmly into the bottom of a mini muffin pan or molds and chill for 10 minutes.
  3. In a bowl, combine cream cheese and powdered sugar until smooth. Then add vanilla extract.
  4. Whip heavy cream until stiff peaks form, then fold it into the cream cheese mixture along with the chocolate chips.
  5. Spoon the cheesecake mixture into the crusts and smooth the tops if desired.
  6. Chill for at least 1 hour or until firm.
