A delightful combination of creamy cheese, tart cranberries, and sweet pineapple rolled into bite-sized balls and coated with crunchy pecans.


Ingredients

  • 8 oz cream cheese, softened
  • 1 cup fresh pineapple, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
  • 1/4 cup coconut flakes
  • 2 green onions, chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Soften the cream cheese at room temperature.
  2. In a mixing bowl, combine the cream cheese, chopped pineapple, dried cranberries, chopped pecans, coconut flakes, green onions, salt, and pepper. Mix until thoroughly blended.
  3. Scoop out a tablespoon of the mixture and roll it into small balls.
  4. Place the cheese balls on a baking tray lined with parchment paper and refrigerate for at least one hour.
  5. Optionally, roll the chilled cheese balls in additional chopped pecans or coconut before serving. Serve on a platter with crackers or fresh fruit.

Notes

For best results, ensure cream cheese is completely softened before mixing and drain pineapple well to prevent sogginess.
