- 8 oz cream cheese, softened
- 1 cup fresh pineapple, chopped
- 1/2 cup dried cranberries
- 1/2 cup chopped pecans
- 1/4 cup coconut flakes
- 2 green onions, chopped
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Soften the cream cheese at room temperature.
- In a mixing bowl, combine the cream cheese, chopped pineapple, dried cranberries, chopped pecans, coconut flakes, green onions, salt, and pepper. Mix until thoroughly blended.
- Scoop out a tablespoon of the mixture and roll it into small balls.
- Place the cheese balls on a baking tray lined with parchment paper and refrigerate for at least one hour.
- Optionally, roll the chilled cheese balls in additional chopped pecans or coconut before serving. Serve on a platter with crackers or fresh fruit.
Notes
For best results, ensure cream cheese is completely softened before mixing and drain pineapple well to prevent sogginess.
