- 2 cups boneless chicken (breast or thighs), diced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup bell peppers, chopped
- 1 cup onions, chopped
- 1 cup corn (fresh, canned, or frozen)
- 2 cups cheese (cheddar or Monterey Jack), shredded
- 1 cup sour cream
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- Salt to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat a drizzle of olive oil over medium heat. Add onions and bell peppers, cooking until softened, about 4-5 minutes.
- Add the diced chicken and season with chili powder, cumin, garlic powder, and salt; cook until the chicken is fully cooked.
- Stir in the canned tomatoes, black beans, and corn. Let simmer for a few moments.
- In a baking dish, layer some of the chicken mixture, a dollop of sour cream, and a sprinkle of cheese. Repeat layers, finishing with cheese on top.
- Cover with foil and bake for about 25-30 minutes. Remove foil during the last 10 minutes to brown the cheese.
- Let sit for a few minutes before serving.
Notes
For a vegetarian version, substitute chicken with zucchini or mushrooms. Experiment with different cheeses for a unique flavor.
