Description

A comforting and delicious Mexican Chicken Casserole, perfect for family gatherings with layers of chicken, beans, cheese, and spices.


Ingredients

  • 2 cups boneless chicken (breast or thighs), diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup bell peppers, chopped
  • 1 cup onions, chopped
  • 1 cup corn (fresh, canned, or frozen)
  • 2 cups cheese (cheddar or Monterey Jack), shredded
  • 1 cup sour cream
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat a drizzle of olive oil over medium heat. Add onions and bell peppers, cooking until softened, about 4-5 minutes.
  3. Add the diced chicken and season with chili powder, cumin, garlic powder, and salt; cook until the chicken is fully cooked.
  4. Stir in the canned tomatoes, black beans, and corn. Let simmer for a few moments.
  5. In a baking dish, layer some of the chicken mixture, a dollop of sour cream, and a sprinkle of cheese. Repeat layers, finishing with cheese on top.
  6. Cover with foil and bake for about 25-30 minutes. Remove foil during the last 10 minutes to brown the cheese.
  7. Let sit for a few minutes before serving.

Notes

For a vegetarian version, substitute chicken with zucchini or mushrooms. Experiment with different cheeses for a unique flavor.
